Features
With the name in the Friulian language "Blanc di Neri" we have summarized several elements that are at the origin of this classic method sparkling wine. It is produced with native red grapes from Schioppettino, otherwise known as Ribolla nera. The harvest is manual and the grapes are vinified "in white" without the must remaining in contact with the skins. The sparkling wine has a golden color and carries with it a range of sweet and spicy aromas and flavors that are found only in large sparkling wines.
winemaking
The grapes are hand-picked in boxes and softly pressed. The draining must (50% of the weight of the whole grape) is fermented to obtain the new wine. After the first fermentation the fermentation in the bottle begins and lasts for over 18 months.
The wine
Minute and persistent perlage. The color is bright golden yellow; the perfume is decidedly intense and persuasive, with clear scents of small fruits and nuances of cloves. On the palate it is full and firm, with spicy hints typical of grapes; very persistent finish.
Pairings
Excellent as an aperitif, it ideally goes well with the whole meal and with dishes with a strong taste. Given its complexity it can also be pleasant as a meditation sparkling wine.
