Semi-mature sheep's milk cheese
Hard cheese and raw milk, produced exclusively with whole sheep's milk, fresh and coagulated with lamb rennet paste.
The salting is done dry, seasoned for at least 4 months.
White-yellowish rind, bearing the marks of the basket in which it was formed (canestrata), compact paste, white or straw-yellow, with limited holes, delicate and tasty flavor at the same time.
Excellent at the table with the characteristic taste of Sicilian pecorino.
