Created to celebrate the 50th anniversary of the foundation of the winery,
this Trebbiano is the result of experimentation:
the reintroduction of natural fermentation typical of the 1960s.
The resulting wine was awarded the Tre Bicchieri
prize and has established itself on the Cantina Tollo wine list.

Vinification
Type and time of maceration of the skins: as in the ancient rural tradition this Trebbiano begins the fermentation spontaneously together with the skins. After the maceration period it was pressed and the juice goes to the end slowly fermented in a cement vat where it continues its aging for about 20 months
Temperature of fermentation: 20°C
Malolactic Fermentation: no
Refinement: in cement tanks with yeast fermentation for about 20 months. The wine is bottled without filtration and without any stabilizing treatment
